Sushi is one of the fastest growing food trends in the USA, and the least sustainable because of the devastating effects of overfishing. The amount of CO2 emissions from transporting raw fish all over the world on a daily basis are increasingly alarming, but we have a delicious alternative: P’ushi!
In this P’ushi (Plant-based sushi) workshop, you will learn the art of Sushi making using the local fruits and vegetables that you already have in your fridge! This edible art is naturally gluten free, 100% plant based and full of the flavor of the ocean, without harming a single fish. All levels of cooking skills are welcome to this fun, educational and scrumptious sushi making workshop!
Last year we covered a few different kinds of P’ushi, but there’re always more tricks to learn. This class includes sampling of P’ushi, so bring an appetite.
Instructor Christine Jones has been a chef with a passion for local, organic foods her whole life. From making mud pies in the backyard, to preparing simple meals for her and her little sister while her single mom was hard at work supporting the family on her own, to deepening her food alchemy skills at the Superior School of Cooking of Toledo, Spain, Christine’s curiosity for food alchemy and thirst for innovation will thrive for the rest of her life. Her passion for education has taken her all over the world, where she has led and organized food workshops in Spain, Bali, Thailand, Malaysia, Germany and Finland, collecting new spices, techniques, and food loving family members along the way.
Her latest passion: finding fun ways to inspire people to eat their way into health by adding more fruits and vegetables into their diet. Weight loss, looking good, and having more energy is just the tip of the iceberg. Let us do our part to help heal ourselves and the planet by adding more plant based foods into our diets, and finding inexpensive, sustainable ways to do so!

Although our base price for this course is $45, Sweetwater is a nonprofit that puts on educational programs for elementary schools in the neighborhood and teaches them about food systems and basically where their food comes from. We also host community volunteer days and a farmer’s market every Sunday from November through May. You can donate to Sweetwater in addition to your course fee if you’d like to help us continue our programs. And if you want to get your hands dirty in our gardens you can contribute your time by volunteering Wednesday, Friday, and Sunday mornings from 9-12.
