The quality of our veggies makes any meal we prepare great. And what could be more appealing to the eye then some beautiful strands of pasta laced with some of the kale from our CSA share? With not much more than 15 minutes, you can have this lovely and tasty main course on the table.
Prepare a large pot of water for the stove with a generous amount of salt.
1-2 bunches of kale, stemmed and chopped
1 box of your favorite pasta
1 pint of heavy cream
3 T. good quality olive oil
2 cloves of garlic, minced
fresh Parmesan cheese to taste
salt and pepper
Bring water to a boil and blanch kale. Remove from water and drain, squeezing out as much moisture as possible.
Use kale water to boil pasta.
In a skillet heat olive oil and add garlic. Saute for 30 seconds. Add kale and toss. Add heavy cream, salt and pepper to taste.
When pasta is cooked, drain and toss with cream and kale. Top with Parmesan. Yum.
